Bee bread - Perga, a food source for bees
Perga, better known as bee bread, is fermented and digested fresh pollen. The bees use the bee bread as a food supply for themselves and their brood. The pollen is preserved through a natural fermentation process. The bees transport the fresh pollen on their third pair of legs into their combs, where it is then tamped down and thus takes on the hexagonal shape of the cells. In the honeycomb cell, the bees also cover the bee bread with a layer of propolis, honey, glandular secretions and enzymes. The water content of the bee bread drops significantly after storage in the combs and the fermentation process begins due to the temperature in the beehive as a result of lactic acid fermentation. The germination capacity of the pollen is also reduced. This process shows once again how clever bees are, as fresh pollen does not keep for long and is therefore not suitable for storage.Perga for humans
Perga is a tasty food not only for bees, but also for humans. Even the Vikings and indigenous peoples in North America appreciated it early on.Perga is traditionally used as a supplement to the daily diet. Incidentally, bees only feed on bee bread when food is scarce and also use it to raise their offspring - when there is sufficient food and the weather is good, they resort to fresh flower pollen.
Taste & application
The small, dried pieces of bee bread have become a popular snack or small treat for in-between meals. Perga has a mild, slightly sweet taste. It can be enjoyed on its own, but also goes well with yogurt, muesli, a shake or other dairy products. Traditionally, around one to two teaspoons are consumed daily. It should be stored in an airtight jar, preferably where it is cool and dark. Bee bread can also be mixed with honey. To do this, simply mix the perga into the honey and leave to stand for about two weeks.Origin
