The diversity of the Black Forest united in one honey

The organic forest honey from our Immenstein apiary is a real dream for all fans of the beautiful Black Forest, as it combines the different flavors of the region in one honey. The bees collect honeydew from spruce, fir and shady deciduous trees for the forest honey. Forest honey impresses with its mild, spicy aromas and a full, aromatic aftertaste. Honeydew honey, which contains a high proportion of honey from Black Forest spruce trees, is particularly suitable for refining sauces and marinades, but can also be used as a sugar substitute. Due to its full flavor, it is often used in dishes and baked goods where it is also intended to be tasty.

A delicious combination of honeydew from spruce and deciduous trees

Most people are more familiar with blossom honey - it is produced by bees collecting nectar from flowers. However, our forest honey is a honeydew honey - this is based on a different substance. Bees collect honeydew, the excretions of insects that suck on plants. Our forest honey consists in particular of the valuable honeydew from various deciduous and coniferous trees typical of the Black Forest. This produces the unique organic honey, which reflects the flora of the forest in terms of taste. If you are looking for another highlight from the Black Forest, our fir honey may also be something for you - it comes mainly from the silver fir, which has been at home there for many thousands of years and characterizes its appearance - this honey is an absolute rarity.

How does forest honey differ from our blossom honeys?

Forest honey and blossom honey can usually be distinguished from each other at first glance: by their color. Our forest honey is dark, it has a reddish-brown color - our blossom honeys appear in various shades of yellow. The consistency is also different: While our blossom honeys, with a few exceptions, are usually creamy when stirred and tend to be spreadable, forest honey is liquid and crystallizes only slowly. If it does need to be liquefied, this can be done in a water bath. Caution: This must not be warmer than 40°C so that the valuable ingredients are not lost. The different honeys also differ in taste: Forest honey is not dominated by sweetness, as it contains less fructose and glucose than its nectar counterparts. It is strong, malty and delicately spicy, sometimes also slightly resinous.

Our forest honey is Bioland-certified and therefore meets the highest quality standards. It is important to us that our bees are kept in a manner appropriate to their species and nature and that the honey is harvested carefully. As with all types of honey, the production of forest honey depends heavily on the weather and can therefore fluctuate from year to year - in some years there is a lot of honeydew for the bees, in other years little.

By the way: Our forest honey also refines some of our drinks with honey, including honey beer, honey whiskey and honey gin.
