The lime tree, a stately, widespread deciduous tree, is in full bloom in June and July and attracts our bees, as well as other insects, with its intense, beguiling scent. In the Upper Rhine Valley, the bees find a rich supply. As if in a frenzy, they diligently collect the nectar and use it to produce the aromatic lime honey. Our lime honey is therefore a blossom honey and not a honeydew honey. Like most of our blossom honeys, it is stirred creamy and therefore has a rather firm consistency.
