Our silver fir honey is a rare variant of forest honey, which is characterized by its dark color and very intense aromas. The taste of fir honey is impressive with its highly aromatic, full-bodied note, with the typical fine fir aromas coming through clearly. It is not considered a real delicacy for nothing!

Silver fir honey is very versatile

Whether on breakfast bread, in tea or for refining cooking and baking - Black Forest fir honey is a versatile ingredient in the kitchen that adds a very special touch. However, as with other types of honey, you should note that it should not be heated above 40°C. Hot drinks should therefore always cool down a little before adding the honey. Are you wondering why you should add it when baking? In this case, we want to put the valuable ingredients to one side - fir honey is simply a delicious sugar substitute that gives baked goods a very unique taste.

Fir honey is a honeydew honey

Fir honey is not blossom honey. So-called honeydew honeys differ from blossom honeys in several ways. Apart from their different color, their liquid consistency and their more bitter taste, they are also produced differently by bees than blossom honeys: The latter are obtained mainly from plant nectar, while bees collect what is known as honeydew for honeydew honey. Honeydew is the excrement of insects that suck on plants, for example various aphids. The bees collect the sugary substance and use it to produce fine forest and fir honey.

The western Black Forest is home to the silver fir, or more precisely, it characterizes the landscape of the region. We are delighted that it is possible for us to harvest this unique honey locally and process it in our own apiary. Silver fir honey is a rare type of honey - production can vary greatly from year to year as it depends heavily on weather conditions, but also on many other factors: if there is heavy rainfall, for example, the honeydew is "washed off" directly from the trees and is not available to the bees. Our fir honey is Bioland-certified and therefore meets the highest quality standards. It is harvested carefully and we attach particular importance to keeping our bees in a manner appropriate to their species and nature.
