Sweet chestnut honey from the Black Forest

The sweet chestnut or chestnut tree is not only popular because of its tasty nut fruits - it is also a real tree of the future, as it is very adaptable and defies climate change. But it's not just its fruits that are a big hit - our bees love the sweet chestnut's nectar and use it to conjure up fine sweet chestnut honey that is unlike any other honey.

Sweet temptation with tart nuances

Sweet chestnut honey is an exceptional type of honey in many respects. Its flavor is very intense, not dominated by sweetness, but by tart, delicately bitter nuances that make it a real delicacy. It tastes particularly good in combination with savory dishes, for example on a strong hard cheese or on bread combined with salted butter. It is also excellent in Mediterranean cuisine, for example with baked vegetables, but should always be used in moderation due to its dominant flavor.

A blossom honey with many special features

It is not only its rather bitter taste that distinguishes sweet chestnut honey from most blossom honeys. Its color also differs from most blossom honeys we know - it is not yellow, but rather reddish-brown and dark. In addition, it has a liquid consistency, which is otherwise only the case with acacia honey among our blossom honeys. This is because the fructose content is higher than the glucose content - honeys with this composition are slow to crystallize.

Creation and harvesting of honey

Sweet chestnut trees usually blossom in June or July and are already over within a month - this means that the bees only have a short period of time to collect enough nectar. To make matters worse, sweet chestnut trees only start to flower when they are 20 to 30 years old. The bees make do by collecting not only nectar from the flowers, but also honeydew from the trees: This is another reason why sweet chestnut honey is no ordinary blossom honey. The ratio of honey from nectar and honey from honeydew varies from year to year. Incidentally, sweet chestnut trees not only provide bees with plenty of nectar and honeydew, but also lots of pollen - in addition, many other insects, especially beetles, find food and shelter there. Sweet chestnut honey is a real rarity from the Black Forest and an absolute insider tip for connoisseurs!

Our sweet chestnut honey comes from our own bee colonies in the Black Forest and is harvested with particular care to preserve the unique aromas of the honey. This honey is processed and bottled in our own apiary with love and care based on knowledge and tradition. We are Bioland-certified and therefore meet the highest standards for the well-being of our bees and the processing of our products.
